Too Much Vegetable Stew
Ingredients
- 3 C water
- half a stalk of celery, chopped
- 8-12 carrots, chopped
- 1 medium white onion, sliced in half
- 2 large potatoes, diced
- 1 large turnip, diced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 jalapeƱos, sliced lengthwise
- 3 cloves garlic, 2 chopped, 1 whole
- 1 can whole kernel corn
- 1 can English peas
- 1 can baby lima beans
- 1 C broth
- 1 domestic lager beer
- 1 t dill weed
- 1 T black pepper
- 1 large purple onion, chopped
Directions
In a large pot, add water and the celery, boil a couple of minutes, reduce to simmer. Add the rest of the ingredients an spices, bring to a boil. Reduce heat and simmer until the carrots are ready.
