"Authentic" Spanish Rice
Ingredients
- 3 Tbsp. butter
- 1 cup long grain rice, uncooked
- 1 tsp. minced garlic
- 1/2 tsp. salt
- 1/2 tsp. cumin
- 1 lb tomatoes
- 2 jalapeno peppers, chopped (optional)
- 2 C vegetable broth
- 1 onions, chopped
- 3 Tbsp. fresh cilantro, finely chopped
Directions
- Heat oil in a large saucepan over medium heat.
- Add the rice and gently stir until rice begins to lightly brown.
- Add the garlic, salt, and cumin and stir the rice til it looks golden.
- Add the tomato sauce and chicken broth and turn the heat up to medium high.
- Bring the mix to a boil then turn the heat to low and cover the pan with a lid.
- Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.
- Simmer for 20 to 25 minutes.
- Remove from heat and fluff with a fork, then stir in chopped cilantro.
