"Authentic" Spanish Rice

  1. Heat oil in a large saucepan over medium heat.
  2. Add the rice and gently stir until rice begins to lightly brown.
  3. Add the garlic, salt, and cumin and stir the rice til it looks golden.
  4. Add the tomato sauce and chicken broth and turn the heat up to medium high.
  5. Bring the mix to a boil then turn the heat to low and cover the pan with a lid.
  6. Melt butter in a large skillet over medium-high heat; cook and stir onions and jalapeno peppers in the butter until softened, 3 to 5 minutes. Stir Mexican-style tomatoes into onion mixture; add rice, salt, and black pepper. Bring rice mixture to a boil, reduce heat, cover, and simmer until rice is cooked, 40 to 45 minutes. Garnish with sour cream and Cheddar cheese to serve.
  7. Simmer for 20 to 25 minutes.
  8. Remove from heat and fluff with a fork, then stir in chopped cilantro.
