Sister's Cornbread Recipe
Ingredients
- 1¼ C cornmeal
- 1½ C flour
- ¼ C sugar
- 2 T baking powder
- 1 T vital wheat gluten
- ¼ t salt
- 2 eggs
- 1 T vegetable oil
- 1 C water
Directions
- Preheat over to 425°F
- Lightly grease a cast iron skillet
- In a large mixing bowl, combine all dry ingredients and sift together well
- In a separate bowl, combine eggs, waters, and oil and beat well
- Add all wet ingredients to dry ingredients and stir
- Pour batter into skillet
- Place on bottom rack for 25 minutes
- Move to top rack for up to 25 minutes
- When top is golden with some browning and a knife inserted into center comes out clean, cornbread is done
