Simple Stew
Ingredients
- ½ C chopped onion
- ¼ C sliced celery
- 4 cloves garlic, crushed
- 1 t pepper
- 1 C shredded carrots
- ½ C corn kernels
- 1 14oz can crushed tomatoes
- 4 C vegetable broth
- ½ C frozen green peas
- ½ C firm tofu, diced
- 3 C fresh spinach leaves
Directions
- Saute onions, celery, garlic and pepper 5 minutes
- In a 4- to 6-quart pot, add carrots, corn, tomatoes and broth with sauteed vegetables. Bring to a boil, reduce heat to low and simmer 20 minutes
- Add peas, tofu, and spinach leaves. Simmer 5 minutes or until spinach is bright green
