Risi e Bisi (Italian Rice and Peas)
Ingredients
- 2 tablespoons olive oil
- 1 onion (small, finely chopped)
- 1 clove garlic (finely chopped)
- 7 ounces arborio rice
- 3 cups vegetable stock
- 8 1/2 ounces frozen peas
- 1 ounce Parmesan cheese (grated + extra, shaved, to serve)
Directions
- Heat oil in a frying pan over medium-high heat. Add onion and garlic. Cook for 2-3 mins, stirring constantly, until softened.
- Add 1/2 cup stock and cook for 5 minutes. Remove from heat, add rice, and mix throughly
- Stir in grated Parmesan. Serve sprinkled with shaved Parmesan and fresh ground black pepper.
