Peanut Blossom Sesame Toss
Ingredients
Sauce
- ¼ cup creamy peanut butter
- 2 T soy sauce
- 2 T rice vinegar
- 1½ T packed light brown sugar
- 1 t coriander
- ¼ cayenne pepper
Tofu & Vegetables
- ¾lb Tofu
- 1 T soy sauce
- 1 T cornstarch
- 1 T sesame oil
- 3 cloves garlic, minced
- ¾lb Soba noodles, cooked
- bean sprouts
- 2-3 stalks celery
- 2 spring onions
- 3 carrots
- water chestnuts
- bamboo shoots
- 1 red bell pepper
- 2 T toasted sesame seeds
Directions
Sauce
Whisk together ingredients until smooth; set aside
Tofu & Vegetables
- Combine tofu, soy sauce, and cornstarch
- In a large sauté pan, heat sesame oil over medium-high heat, add tofu and garlic and saute until lightly crisp; set aside
- Lower heat to medium low, saute sauce and vegetables until well-coated and soft
- Combine tofu, garlic, vegetables, and sesame seeds and toss
