Pancakes a la CU
Ingredients
- 2 C all-purpose flour
- 2 T baking soda
- ½ C sugar
- 2 large eggs
- 2 T oil
- 2 C whole milk
Directions
Preheat griddle to 400 (medium-high), grease lightly
Sift dry ingredients together in a large bowl. In separate bowl beat eggs, oil, and milk until well-blended. Add liquid to dry ingredients and whisk until creamy with few lumps. Spoon onto griddle, flip when edges are dry and bubble cover top.
For less dense pancakes, separate eggs. Add yolks to liquid, whip whites to soft peaks and add last.
For thinner pancakes, add more milk or water to batter.
