Red Beans and Rice based on how Louis Armstrong Liked It
Ingredients
- 1½ C red beans
- 2 C your choice of protein
- 1 medium onion, chopped
- 1 14oz can crushed tomatoes
- 1 T vinegar
- 1 t tabasco sauce
- ¼ t thyme
- ¼ t cayenne pepper
Salt and pepper to taste
Directions
- Cook beans
- In a dutch over or large pot, brown the protein and onions
- Add the beans and bring to a simmer
- Add the rest of the ingredients
Tips for cooking dried beans
In the morning or the night before:
- Cover beans with about 6 cups of water
- Bring to a boil and cook 2-3 minutes
- Turn off heat
When you are ready to begin, bring the beans to a boil, cover, and simmer about an hour, or until soft.
