Red Beans and Rice based on how Louis Armstrong Liked It


Ingredients

Salt and pepper to taste

Directions

  1. Cook beans
  2. In a dutch over or large pot, brown the protein and onions
  3. Add the beans and bring to a simmer
  4. Add the rest of the ingredients

Tips for cooking dried beans

In the morning or the night before:

  1. Cover beans with about 6 cups of water
  2. Bring to a boil and cook 2-3 minutes
  3. Turn off heat

When you are ready to begin, bring the beans to a boil, cover, and simmer about an hour, or until soft.
